I met Nick at the Fiery Food show today, here in Albuquerque. (If you weren't there, there's always next year!) It turns out he knew my Dad, who had a restaurant called Harold's Cajun Glory Cafe in Columbus, Ohio! Small world! (Out of 200 or so vendors that I talked to, Nick is the only one who gave me a full-sized sample of his products! Thanks Nick!)

I tried the Cajun Island Sweet Blackened Sauce, and it is delicious! I will probably try a little of this with my smoked Boston Butt, a wonderful barbecued pork roast that I learned to cook from old man Hill (as we called him), an old dude in Monroe, Louisiana, at a place called Hill's Barbecue. I think he passed away, and his barebecue shack disappeared. I still have dreams of Hill's Barbecue (served on white bread!) with his Black Barbecue Sauce!
